Abstract
Corn , wheat, and rice underpin the human diet, together contributing to most of humanity's food calories and proteins. The structure, efficiency, and stability of global production and supply chains for these crops are central to food safety and security but face numerous environmental, political, and structural challenges. Greater investments in agrifood systems, along with scientific knowledge and effective policy interventions, should be more effectively linked to reduce threats from climate change and crises such as pandemics and social and armed conflicts. This chapter describes major global challenges to corn, wheat, and rice production and distribution, as well as measures to improve the resilience of the cereal supply chain and increase cereal safety.
